Are you a fan of gingersnap cookies? Then you’ll for sure love this gingersnap cookie smoothie. It tastes just like the cookie, but in smoothie form, and contains totally raw, vegan and gluten-free ingredients! How cool is that?
It functions as an amazing post-workout smoothie or mid-day pick-me-up. It contains beneficial carbohydrates and protein to refuel tired muscles and a groggy brain. The dates contain plenty of iron to help build stronger blood, and the ginger promotes healthy digestion.
Alternatively, you could freeze all the bananas in this recipe, and add them, along with all of the other ingredients to create an “ice cream” recipe instead.
Gingersnap Cookie Smoothie Recipe
– 1 frozen ripe banana
– 3 ripe bananas
– 4 pitted medjool dates
– 1/2 tsp. cinnamon
– 2 inches fresh ginger root
– 1/2 tsp. fresh vanilla bean powder
– 1-2 cups young coconut water
Add all of the above ingredients to a blender. Add as much liquid (coconut water) as you prefer (based on smoothie thickness). Blend for 30-60 seconds and serve in a tall glass. Enjoy!
