I’ve always loved the subtle liquorice flavour of fennel combined with the sweetness of apple, sourness of lemon and spicy tones of ginger. That’s what this fennel juice recipe is made of, and it’s one of my favourites.
Fennel is carminative, meaning that it helps promote digestion, alleviates indigestion and prevents formation of gas in the intestines. It is rich in antioxidants, too, as well as the anti-inflammatory phytonutrient called anethole. It also can help treat congestion by loosening up mucus in the lungs, and reducing mucus buildup.
Fennel also contains iron and histidine. Histidine is an amino acid that helps in the treatment of anemia. It stimulates the production of haemoglobin, and other blood components.
When juicing fennel I like to use the whole thing (including the green parts, too!). You can use only the bulb, if you please, but the green provides the body with extra health-boosting benefits!
Fennel Juice Recipe
Ingredients:
– 1 fennel bulb (the whole plant)
– 3 pink lady apples (or whatever apples you have on hand)
– 7 stalks of celery
– 4 inches fresh ginger root
– 1 lemon, peeled

Run all of the above ingredients through the juicer, and drink immediately. Enjoy!
