Berry Beet Smoothie

If your energy has been a little off lately, and you feel lethargic, it may be the case that your blood needs a little TLC. This berry beet smoothie improves iron absorption, helps transport oxygen to the cells in our body and quite literally builds the blood.

Iron is a trace element which is needed by the body for the formation of blood. More than half of the iron found in our blood is in the form of hemoglobin (the red pigment in blood). Hemoglobin helps transport oxygen from the lungs to our tissues, plays a role in activating enzymatic reactions and is necessary for collagen synthesis. It is also needed for regulation of cell growth and is required for good cognition and behaviour.

The ingredients in this smoothie work together in such a way that the higher-iron foods are readily absorbed by the foods that are higher in vitamin C. Vitamin C helps the body absorb non-heme iron into the blood stream more effectively. The beets, chia seeds and spinach are iron heavy plant foods, whereas the berries, orange juice, and spinach (again) are rich in vitamin C (and thus synergistically work together!). The coconut water is another additional power food that helps replenish electrolytes and will leave you feeling fresh and alert!

Berry Beet Smoothie Recipe

Ingredients:

– 2 cups blackberries or blueberries
– 1 large beet, peeled
– 1 cup spinach
– 1 cup freshly squeezed orange juice
– 1/2 cup coconut water
– 2 tsp. chia seeds
– 1 inch fresh ginger root

Method:

Stick all of the above ingredients in a blender, and blend for 30-60 seconds until smooth. I recommend using a high-speed blender like a Vitamix or Blendtec to ensure the beet gets pulverized into a smooth consistency!

      Reduce consumption of wheat, dairy and animal products. Consume anti-inflammatory herbs like ginger and turmeric, and fruit like watermelon, pineapple and all leafy greens.
