Almond Protein Chocolate Chip Cookies (Healthy + Easy)

These cookies are chewy, chocolatey, and protein-packed (over 5g per cookie!). The perfect snack or post-workout indulgence that won’t spike your blood sugar. Slightly crisp on the outside, soft and chewy inside! And yes, they’re gluten-free, dairy-free, and naturally sweetened.

Ingredients
  

  • 1 cup Naked Nutrition Almond Protein
  • 1 cup almond flour
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup room temperature
  • 3 tbsp plant-based milk (like coconut, almond, oat)
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the almond flour, almond protein, baking soda, and salt.
  3. In a separate bowl, mix the melted coconut oil, maple syrup, vanilla, and apple cider vinegar until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until mostly combined.
  5. Pour in the 3 tablespoons of plant milk and mix until a soft dough forms.
  6. Fold in the chocolate chips.
  7. Scoop tablespoon-sized portions of dough onto the prepared baking sheet. Flatten slightly with your fingers.
  8. Bake for 12-15 minutes, or until the edges are golden and the centers are set.
  9. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
