I am obsessed with pumpkin pie, or anything pumpkin for that matter. So when I made this pumpkin spice smoothie, my tastebuds nearly died in tastebud heaven. It’s deliciously creamy, sweet and spicy all at once, and is loaded with vitamins, minerals and antioxidants. In fact, pumpkins contain a host of surprising health benefits, like keeping our waistlines trim and reducing inflammation.
The awesome thing about this smoothie is that it is 100% raw! If you want to help reduce the starchiness of the pumpkin, then chop the pumpkin into cubes (take outer peel off first) and soak overnight in water with 1 tablespoon of lemon juice. Enjoy!
Raw Pumpkin Spice Smoothie Recipe
Ingredients:
– 1 cup raw pumpkin, peeled and cubed
– 1 cup low-fat coconut milk
– 1 ripe banana
– 1 frozen banana
– 2 pitted medjool dates
– 1 tsp. ground cinnamon
– 1/4 tsp. nutmeg
– 1/4 tsp. vanilla bean powder
Method:
Place all of the above ingredients in a high-speed blender and blend on high for 30-60 seconds. Serve in a mug and sprinkle with cinnamon.
